RESUMO:

Several types of microorganisms can be present in the swine carcasses, its origin from superficial contamination of animals’ skin, as well as fecal overflow or cross-contamination during the slaughter process. This contamination may decrease the product life, also as to cause damages by being involved in foodborne diseases, an example is the Salmonella. Thus, the microorganisms reduction in the carcasses during the process is essential to public health and food chain sustainability. Aiming to diminish bacterial load at the final product, clean technologies must be addressed to reduce that contamination. The new technologies choice must be addressed with the aim of reducing the microbial load at the final product. Physical or chemical treatments could be applied in the carcasses. It’s important to underline that decontamination must not be used as a substitute for good production practices, but being part of an integrated food safety system. Nowadays in Brazil the use of chemical treatment on carcasses is not allowed yet, unlike the United States where it is legally applicable. The world scientific production has an exponential growth over the few decades, the large number of scientific publications has become a problem to the selections and qualified analysis of the scientific literature, what stimulate the use of alternatives to analytical methodology providing the global vision of experimental results. Meta-analysis is a secondary research which involves a stringent and systematic method, capable of replication, that allows it to combine results steaming from different studies.  The present study aims to access through the systematic review and meta-analysis to study the evolution over swine carcasses in the world for the last 20 years. Four databases were researched (PubMed, Scielo, ScienceDirect, Web of Scince), through English keywords (“pork carcasses decontamination”, “swine carcasses decontamination” and “pig carcasses decontamination”), it is seeking the articles that meet the eligible criteria. It founded a total of 1.383 articles, it’s going to be selected by title and summary and analyzed by EndNote program to verify duplicate articles. To obtain the data which is going to be used in the study, a systematic literature review will be done, identifying the studies that have evaluated carcasses treatment. The review is going to be conducted in four stages: identification, screening, eligibility and inclusion, as recommended by PRIMAS’ items report, and then it must be analyzed through meta-analysis.
