RESUMO:

The carcass quality and consequently the bovine meat quality are dependent on several intrinsic and extrinsic factors to the animals. This factors can be mentioned the breed and the nutrition, respectively. These factors alone or together will define the physical-chemical, technological and sensorial quality of the meat. Therefore, the objective of this project will be to evaluate the effects of finishing system and breed on the carcass and the meat traits of certified steers. The experiment will be conducted in abattoir plants with inspection. Carcass samplings will be performed by deliberate selection, and only carcasses of 18 to 24-month-old males from the Hereford, Angus and Devon breeds finished at pasture, semi-feedlot or feedlot systems will be selected. Thus, it will be a completely randomized design in a factorial design with three breeds (Hereford, Angus and Devon) and three finishing systems (pasture, semi-feedlot and feedlot) totaling nine treatments with 12 replicates. Prior to slaughter the animals will be weighed and the body condition score assessed. The finish, weight, yield and pH of the carcasses will be evaluated. The loin eye area, the marbling index, the subcutaneous fat thickness, the moisture, ash and crude protein contents, the quantification and identification of the lipid profile, color, cooking losses, shear force , texture, lipid oxidation, total protein and α-tocopherol in the Longissimus dorsi muscle of each carcass will be evaluated. Regardless of the breed, it will be expected that pasture system finished animals will present meat with higher levels of α-tocopherol, omega-3, CLA and oxidative stability than animals finished in semi-feedlot and feedlot systems bringing benefits to human health.
