RESUMO:

In line with current national legislation, as well as the recommendations of the Food and Agriculture Organization of the United Nations (FAO) and the recommendations of the Codex Alimentarius, the production of foods with the lowest potential harmful to consumer health is a must of food producing establishments, and the use of the Good Manufacturing Practices (GMPs) program is crucial to their safety. Thus, when working in the industry that processes animal products and does not pay attention to the hygienic and sanitary care as well as the documentary care to which the GMP program addresses, the company compromises the safety and quality of the elaborated products, being able to expose these high levels of contaminants, rendering them unfit for consumption. Thus, in the present study, two small family agroindustrial establishments located in the northwest of the state of Rio Grande do Sul were evaluated for the microbiological quality of the products. LF and smoked sausage (LD) were evaluated for the following microorganisms: Staphylococcus coagulase positive, Escherichia coli, Salmonella spp., And Clostridium sulphite reducer, as stipulated by the Resolution of the Directing Council, RDC No. 12 of January 2, 2001, in the raw material, meat grinders, in the table of manipulation and in the product already ready for the consumption, being in that the microbiological evaluation was carried out during 8 days for the LF and 9 days for the LD, in order to relate the result of the same with the current legislation, RDC nº 12, as a parameter for proper use of GMPs. Samples were collected in triplicate without prior notice. The methodology used for the microbiological evaluation followed the recommendations of the American Public Health Association (APHA), Microbiological Methods & Bacteriological Analytical Manual (BAM). Only a sample of LF was positive for Salmonella spp, corresponding to 1.69% of the total evaluated, 10.9% presented values above that allowed for Staphylococcus coagulase positive, already for Escherichia coli and Clostridium sulphite Reducer, both presented acceptable standards presence of microorganisms. Thus, the need to constantly work on improving the use of GMPs is evident.
