RESUMO:

The nutritional and organoleptic quality of the ingredients used to elaborate the piglets' diets is fundamental for their performance. Complex formulations like the nursery diets may lead to reactions that interfere in the vitamins, minerals and ethereal extract stability, changing the nutritional characteristics. The objective of this study was to analyze the possible causes of the proteic supplement to piglets does not oxidize before the due date (90 days). There were 5 treatments: “Control” (T1), with standard formulation; “PxMore5” (T2), with 5% more piglets' vitaminic mineral premix in the formulation; “PxLess5” (T3), 5% less of the standard dosing of the piglets' vitaminic mineral premix in the formulation. These three treatments were produced in a mixer with a capacity of 400 kg. “Routine/Ration” (T4), T1 formulation produced in a batch of 4000 kg; “Routine/Premix” (T5), T1 formulation produced in a batch of 1200 kg. T1, T2 and T3 received only ingredients in environment temperature, the other ones received the soybean meal grounded recently, in high temperature, between 25 ºC and 35 ºC. For each treatment, were sent three 20 kg bags to regions where the climatic conditions are critical, and they were kept for 120 days: São Gabriel do Oeste (SGO)/MS (hot climate), Araquari/SC (hot and humid climate) and Chapecó/SC, in the Ration Factory. Three times per day (morning, midday and afternoon), in these places, the temperature and humid were registered in the rooms where the diets were stored. On days 0, 7, 15 and after fortnightly until the 120 days, it was collected a sample from each treatment for bromatological analysis, mineral analysis, peroxide value (mEq/g) and acidity (mg/g). Fortnightly, it was collected samples for water activity (Aw) analysis. In the treatments from Chapecó, on days 0, 45, 90 and 120 were collected samples for microbiological analysis (viable aerobic mesophiles UFC/g). At the end of the 120 days of storage, it was evaluated the color, odor and other alterations. The Aw of the treatments from Araquari (0.4271 ± 0.0034) differed (P <0.05) from those from SGO (0.4158 ± 0.0034). The acidity was higher in T5 (3.0851 ± 0.0566; P <0.05). The crude protein (%) of T3 (26,432 ± 0,1338) differed (P <0.05) from T4 (25,869 ± 0,1338), which in turn differed (P <0.05) from T5 (23,200 ± 0, 1338). The highest mean temperature was recorded in SGO (26.576 ± 0.1445), while the highest mean relative humidity was in Araquari (80.491 ± 0.4733). The way how the proteic supplement is made can alter the nutritional composition of the final product. Formulating compositions with different compounds becomes a challenge since they can interact with each other and with the environment during their useful life, promoting oxidation, and interfering in the final product quality. The ingredients used are influenced by both the raw materials, storage periods, relative humidity of the air, the temperature at which they are subjected, the latter being the most important in the peroxidation of additives in this study.
