RESUMO:

The experiment was conducted with the objective of evaluating the productive performance and the qualitative characteristics of the meat of finishing beef cattle fed with whey. The experimental design was completely randomized, with 2 treatments and 3 replicates. A total of 24 animals, of taurine races and their crosses, with initial live weight of 319.3 ± 11.4 kg, distributed in 6 stalls were used. The experimental period of the confinement was 120 days, beginning on 07/07/2018 and ending on 08/11/2018, with the animals loading for slaughter in the morning. Subsequently, carcass yield was observed and qualitative analyzes were carried out on the meats of these animals, such as evaluation of marbling and coloration of longissimus thoracis muscle. The feed ratio, with voluminous: concentrate ratio was 40:60, containing 13% crude protein and 73% total digestible nutrients. The control diet was composed by corn silage and concentrate, and the alternative diet by corn silage, concentrate and whey. Whey was included at the level of 15% of the dry matter of the diet. The animals were fed in two daily periods, between 07:00 and 07:30 hours and 17:00 and 17:30 hours. The remains of the troughs were collected daily and stored for later weighing. The normality test of Shapiro-Wilk was carried out, and later, the analysis of variance to estimate influence of the factors on the dependent variables, being the initial weight used as covariate. The SAS program, University Edition, was used to perform the statistical analyzes. There was no difference (p> 0.05) in the average daily gain of live weight between the two groups, being 1.49 ± 0.04 and 1.50 ± 0.06 kg / day for the control and serum treatment, respectively. The animals of the control group were sent to the slaughter with average weight of 500 kg, presenting average weight of the carcasses of 279.15 kg, while the animals fed with whey were slaughtered with average live weight of 508 kg and 287.77 Kg of average carcass weight. The whey inserted into the animals is diet at the level of inclusion mentioned in this study did not affect their productive performance. Thus, this by-product can be used in the feed of feedlot cattle as an alternative to reduce feed costs.
