SUMMARY:

There are various causes of condemnations in the inspection lines for poultry, among them, bruises are one of the most relevant causes, causing losses to the sector. The objective was to support a new destination for parts of chicken carcasses affected by bruises, which are currently removed and condemned. A total of 1,200 microbiological samples were taken, seeking proof of the safety of the sampled parts. The analyzes were divided according to the type of lesion found, classified into recent bruises and old bruises, each with its respective control group. The bruises were classified according to the macroscopic aspect and coloring, in old (greenish color, occurring in the aviary) and recent (strong red to violet color, occurring in the discharge and hanging, and, light red to pink color, occurring at the time of slaughterhouse). 10 batches were randomly selected. In each batch, 30 samples were collected from each group previously described, totaling 300 samples per group. The collected samples were related to bruises on wings, contemplating humerus, radius, ulna, carpometacarpal and phalanges. Microorganisms of interest in public health and food safety were measured, aiming at researching the safety of the collected samples - the microorganisms surveyed being Escherichia coli, Staphylococcus aureus and Salmonella spp. For statistical analysis, with the groups clearly matched, each group was compared with its respective control group, using the paired t-test. Subsequently, for the comparison between the groups, non-parametric methods were used. The Kruskall-Wallis test was used followed by the Wilcoxon test. The economic impact that the condemnations caused by bruises generate on the industrial poultry sector was also measured. Solid results are expected regarding the safety of the sampled parts, allowing the destination of the parts affected by contusions to the production of innocuous and safe items for human consumption.
